Labor Day represents a gala gathering of members of the Storm King Golf Club and this year members can enjoy their new clubhouse and savor food prepared by Nicky Corea, who joined the staff just one week ago.

Nicky, who developed a following at his former village restaurant, Nicky’s at Storm King Theatre, said he felt at ease stepping into the kitchen at the club’s busiest time of the year. He said when he sees the orders piling up, it inspires him to get into the rhythm of the fast-paced work.

During the day, most of the orders come from the clubhouse bar and grill. Dinner is served on Fridays and Saturdays in the main dining room but during Labor Day weekend, special buffets are prepared for the membership throughout the day.

Nicky and clubhouse manager Michelle Donovan create the menus each week. Nicky said that he likes to use fresh local ingredients and he finds that the weather plays a role in what he thinks diners would enjoy.

“People are savvy today and they want things that are worldly,” he said, explaining that he doesn’t offer signature dishes because they limit both the chef and the customers.

Nicky got his start in the restaurant business in Aspen, Colorado, where sophisticated diners demand a high standard of food. After working next to some of the best chefs in the business for a decade, Nicky returned to his hometown, Cornwall-on-Hudson in 1999 and has been cooking in his own restaurant or for others ever since.
