General News: New Restaurant Opens for Business

Food lovers will be happy to know that a new restaurant has opened up in the village of Cornwall-on-Hudson.

Drew’s in the Square is the creation of Andy Doehla and Alexis Raccasi, two graduates of the Culinary Institute of America (CIA) who are fulfilling a dream of nearly every culinary school grad – starting their own restaurant.

The new restaurant opened in late May in the space that was once home to Nicky’s at Storm King Theater. Alexis said that the couple heard the Nicky’s was closing last September and they immediately saw an opportunity they had been waiting for to give their culinary vision a home.

The menu that Andy and Alexis have created is described as French-inspired American food. It includes coq-au-vin, steak, scallops, and pastas among its entres and a delicious array of interesting salads and appetizers. Alexis says her cheesecake may be the favorite item on the dessert list. Chocolate-dipped strawberries for diners accompany every check.

The couple, who met as students at the CIA, say they want customers to enjoy table service that is a step above what many restaurants provide. They also re-decorated the dining room, adding wood paneling, wall sconces, crown molding and other details to provide a relaxed, dignified atmosphere for diners.

Andy, 26, grew up in the village and appears to be happy fulfilling his dream right at home. He got his first lessons in cooking at Painters’ restaurant, where he worked for six years. He talks about how he prepped food in Painter’s kitchen, where, he says, he begged chef Donna Hanover to teach him how to cook until she finally agreed.

Andy and Alexis do most of the prepping and cooking for the restaurant. Their staff comes in at 4 p.m., when they are served a family-style meal before the restaurant opens up. Business has been steady since Drew’s opened its doors. In addition to the main dining room, table are also available in the bar area of the establishment.
