There is a re-birth of sorts on Hudson Street in Cornwall-on-Hudson, a return of a chef whom many hold close to their hearts (and stomachs).

Nicky Correa, whose restaurant at the Storm King Theatre was a favorite hangout of many who enjoyed his cuisine and friendly bar until it closed suddenly last September.

Now Nicky is back in the kitchen, this time at the Sidewalk Cafe where he will be serving dinner three nights a week.

Nicky and cafe proprietor Bob King have re-decorated the dining room, hanging stained glass work and art to create more of a supper club atmosphere.

The restaurant started serving dinner last weekend and plans to be open on Thursday, Friday and Saturday nights, with seatings at 6 and 8 p.m.

King said that the response has been terrific, with the 40-seat dining room filling up just by word of mouth.

Town supervisor Kevin Quigley was one of those who dined at Nicky’s new place last weekend – not just once, but twice. He says the blackened chicken with gorgonzola sauce was delicious, as was the sliced pork the night before.

“I like to eat local, that’s important,” Quigley commented when he was spotted grabbing a quick wrap sandwich at the cafe on Tuesday afternoon. He also tipped his hat to Bob King’s cooking, noting that he has a great flare whether making an early morning breakfast or lunch meal.

King said that the restaurant is almost filled up for its Valentine’s Day dinner but people may be able to find a place if they call right away.

There is no name for Nicky’s latest venture into the restaurant business but King has a favorite. “We think he should call it Nicky’s at Night,” he said with a laugh.
