General News: Spanish Restaurant to Open in Village
December 04, 2007
Tapas, anyone? The delicious Spanish appetizers will be served in the bar area at PortoSpain, a new restaurant coming into Cornwall-on-Hudson.
Owner Francisco Sierra, a Spaniard who studied cooking in his native country, hopes to open his restaurant by Christmas, as soon as he gets his liquor license.
Right now, he is renovating the kitchen of the Hudson Street restaurant, which has been home to several restaurants this decade, most recently, Pisces.
In the dining room Sierra will serve dishes like paella and other Spanish specialties that rely heavily on seafood and fish that are traditional in his native home of La Corona, in northern Spain.
Sierra lives in Marlboro and cooks at his cousin’s restaurant’s in Staten Island. He has been looking for a place to open his own place and when his wife saw the Cornwall-on-Hudson property when she was driving to work at West Point, he decided to open in the village

Ole'! I CANNOT WAIT! Tapas are the most primordial, heavenly, culinary concept ever! Small portions of many different varieties of flavors and textures and foods; veggies, meats, fowl, breads, sauces... I think I found my new home, ja ja ja ja. Although I have not eaten there yet, after speaking with Francisco the other week, I have a verrry good feeling, un sentido bueno!!! Now if he'll get some musica in there I will surely have found my way to heaven. Bienvenido a Francisco y todos! A comer!
