General News: Soup Lovers Pick Favorite Squash Soup

Who makes the best winter squash soup in the Cornwall area? Well, according to nearly 100 people who did a blind taste test of soups prepared by chefs at 8 area restaurants, the best soup was made by chef Mike Bride’s at Leo’s restaurant. Woody’s All Natural came in a close second and Drew’s on the Square rounded out the top three in this close contest among all of the amazingly tasty and distinctive soups.

The Winter Squash Soup Cook-Off was the highlight of the Cornwall Community Co-op’s first anniversary Harvest Market Festival last Saturday. Although the weather was soggy it didn’t dampen the enthusiasm of the hearty souls who lined up to sample each of soups prepared by the River Bank, Fiddlestix, Canterbury Brook Inn, Storm King Eatery, and Hudson Street Café, in addition to the top three.

Each of the restaurants received acorn and cheese pumpkin squash supplied by Blooming Hill Farm to use to cook up their favorite vegetarian recipe and the results reflected the creativity of local chefs. The soup prepared by Drew’s in the Square was based on the so-called three sisters of the fall harvest, corn, squash and beans, resulting in a hearty stew. Another was based on a mix of apples and squash while yet another was laced with the nutty taste of aged cheese.

The rich and creamy soup made by Leo’s had a hint of corn in it and organizers of the Cornwall Community Co-op’s Winter Squash Cook-Off promise to publish Bride’s recipe in the days ahead on its website (www.cornwallcoop.org).

Could you please give us the corresponding numbers of the winners, as this was a blind taste test? I'm carrying around the numbers 3, 5 & 7 in my head, and I just don't have that much more extra space up there at this point. I'm pretty sure that '7' was the Leo's recipe. Thanks to everyone at the co-op who gave of their time to entertain our taste buds. It was fun.
